Ways to cook pumpkin and other winter squash
by Joanne Frazer

  • Be sure to wash the pumpkin or winter squash prior to cooking. Cut the stem off before roasting whole. If it is too big then it can be cut in half and put cut side down on the baking sheet. You will remove the skin and seeds after it's finished cooking. It is done when it can be easily pierced with a fork.

To Roast: place whole, or halved, or cut into large chunks (rub with oil) either on a baking sheet or in a roasting pan. Oven 400 degrees for 45 minutes or until tender.

To Steam: cut into wedges and place in steamer over boiling water for 25-30 minutes.

To Grill: peel and cut into 1-inch chunks and rub with oil. Grill on high heat for 5 minutes on each side.
