What to do with fennel
by Joanne Frazer

  • Many people have asked us what is our favorite way to use fennel. So, here' some suggestions.

First, cut the green stems off of the bulb. Cut it into quarters lengthwise and then wash under running water to get rid of any dirt.

You can then slice it thinly and add it to salads.

You can chop it and add it to onions and garlic when you use those in practically any recipe. We use these three in our pilafs, frittatas, braised greens, spagehetti sauce, and soups.

You can roast it along with other vegetables.

You can saute, braise or steam it.

There are many recipes for fennel in magazines such as: Bon Appetit, Fine Cooking, and Sunset.
